Pumpkin Pie
Crust
4 cups flour
1 tsp. sugar
1/2 tsp. salt
1 1/2 tsp. vinegar
1/2 cup water
1 egg
1 1/2 cups of Lard
Blend all dry ingredients together. Add the wet ingredients and form into a ball. Cover and let refrigerate for at least one hour before rolling out.
Filling
1 1/2 cups pumpkin
1 cup brown sugar
3 eggs
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. all spice
1 cup evaporated milk
Mix all ingredient together and pour into the pie shell.
Bake at 425* for 15 minutes. Then reduce the heat of the oven to 350* and continue to bake for 35-45 minutes.
Fried Zucchini
In a skillet add 2 tsp. of margarine
1 med. onion, chopped
1 med. sweet green pepper, chopped
1 med. mild or hot pepper, chopped
2 tomatoes, chopped
1 2lb. zucchini, chunked
Salt, pepper and garlic powder to taste. Fry until the vegetables are tender. Serve over rice.
