Potato Pancakes
5 large potatoes
1 medium onion
2 eggs
salt
flour
Peel, wash and grate the potatoes. Place in a large bowl. To that add the onion, grated. Add both the eggs and about 1 tsp. of salt. Sprinkle the top of this mixture with flour, enough just to cover the top. Mix.
In a large frying pan heat vegetable oil or shorting. Drop mixture into hot oil and smooth out to form a pancake. Fry until golden brown on each side.
Serve with fried eggs, grape jelly, or powdered sugar. Makes about 20 medium size pancakes.
Potato Salad
5 lb bag of potatoes, boiled, skins removed and diced
12 hard boiled eggs, diced
1 onion, chopped
2 stalks of celery, chopped
1 small bunch of chives, chopped
1 - 1 1/2 cups of Mayo
1 -1 1/2 cups of Miracle Whip Salad Dressing
Salt and pepper to taste
Paprika to garnish the top
Sliced eggs to garnish the top
In a large bowl combine all ingredients, except for the garnishing ingredients. Mix well. Garnish and chill.
Note: For a spicy potato salad replace the salt and pepper with a Cajun spice. Or use a dash or two of Curry powder.
